Mission Taco Joint is launching its first chef collaboration taco in Kansas City.

Jarocho Pescados y Mariscos chef-owner Carlos Falcon is known for his Veracruz-inspired seafood dishes. Now, he's teamed up with Mission Taco Joint chef and co-owner Jason Tilford to create an amazing octopus taco inspired by Jarocho’s pulpo en su tinta (octopus in squid ink sauce).
“Carlos and I met and discussed the taco over the course of two days, and I was hopeful he would land on a seafood dish, given it’s his specialty, and the fact that this taco collaboration will run through Lent,” says Tilford. “In the end, we came up with a taco that was a true collaboration; one based on a dish he serves at his restaurant.”
The Jarocho Taco features a squid ink tortilla with crispy Spanish octopus, lime slaw, avocado-cilantro emulsion, crema, hibiscus pickled onions and a squid ink salsa negra.

This is Mission Taco Joint’s first collaboration with a local chef in Kansas City. In St. Louis, Tilford periodically teams up with local chefs for taco collaborations, which Mission runs for a few months. A portion of the proceeds from taco sales is donated to a charity of the guest chef’s choice. For the Jarocho Taco, Falcon has chosen Don Bosco Centers, an organization that has been providing free English classes in the metropolitan Kansas City area to adult immigrants from more than 75 countries.
Tilford says that Kansas City can look forward to around two to four taco collaborations per year. He teases that he's chatted with chef Patrick Ryan at Port Fonda and is hopeful that they can collaborate on a taco at some point. “I also like the idea of teaming up with a brewer, coffee roaster, local farmer or even someone that makes a unique item like hot sauce or tofu,” says Tilford. “The sky’s the limit, and it’s just about having fun with it.”
The Jarocho Taco sells for $4.50 per taco and is available now at Mission Taco Joint. The taco will not be included in Mission's discounted late-night happy hour menu.
